SMOOTHIES: A SNEAKY TRICK

FRUIT and SPINACH SMOOTHIE






I've never been a fan of tricking my kids with food. I couple years ago when sneaky chef recipes started appearing everywhere I got a little annoyed. I want my kids to understand what they're eating and realize that vegetables are a big part of your life, whether you want them to be or not.

However, here I am now hiding stuff in their smoothies. While I still make them eat fruits and veggies at lunch and dinner, I've decided to put a bit of unknown pizzazz in their breakfast treat to bring their daily intake of the good stuff up another notch.

So here is my recipe for a Fruit and Spinach Smoothie!


Fruit and Spinach Smoothie - Serves 4


Ingredients:


8-12 ounces apple juice
1 1/2 cup plain Greek yogurt
1 teaspoon honey
1 banana
2 cups frozen fruit (either 1 cup blueberries / 1 cup strawberries or 1 cup mango/ 1 cup strawberries
2 cups raw baby spinach
1 1/2 tablespoons crushed flax seed (I just started adding this. You can totally make it without it)


Set up your blender.


In a small bowl, mix honey and plain greek yogurt.


Add yogurt mixture, 8 oz apple juice, banana, and frozen fruit to blender. Mix until well blended. If too thick add juice as needed.


Add spinach and flax seed. Mix until spinach is broken up and disguised in smoothie.


Pour into four glasses and serve to grownups and children alike. I serve to my children in a plastic cup with a lid so they don't stare at the greenish color and wonder what's going on!
